When I first moved out my mom did the most incredible thing... she made a family cookbook for myself and Mike.

Now though this may seem like a small thing, it was rather incredible because not only does it have all of my favourites (with some extras of course)...

but it also contains our family history. This is great for not only myself understanding my background by also for my future children.

Getting back to the 'eat' portion is my favourite recipe. When I was a kid this meal was by far my favourite. I would crave this meal (and still do). SPANISH RICE!!! Now I am aware there are many recipes for this particular dish but until you have tried this one you really have no idea how many flavours could dance on your tongue.

Spanish Rice:
Ingredients-
1 lbs lean hamburger
1/2 onion (chopped)
1/2 green pepper (chopped)
1/2 red pepper (chopped)
1/4 bunch of celery (chopped)
2 large tin tomatoes (pureed in blender)
1/2 large box of minute rice
1 tbsp chilli powder
1/2 tsp cayenne pepper
1/2 tsp pepper
1 tsp garlic
1 tbsp salt
Steps-
Use large pot (think spaghetti pot)
Sautee vegetables in a little butter and oil (so the butter does not burn)
Once soft, add hamburger and spices
Brown the hamburger
Add pureed tomatoes and heat until boiling (make sure to stir frequently)
Add rice
Cover with a clean towl (so steam doesn't ruin the rice) and put the lid on
Remove from heat
Let stand for 10 minutes
Fluff and Serve
*Remember to adjust spices to taste (especially chili powder)
